Yakhni Pulao | How to Make Yakhni Pulao Step by Step
Yakhni Pulao is a very delicious and tasty rice dish made with mutton, mint leaves and various Indian spices.
Ingredients for Yakhni Pulao:
- 2 cups basmati rice, washed & soaked
- 1 lb mutton, cut into pieces
- 1 cup yogurt
- 1 small bunch mint leaves, chopped
- 1 tsp garam masala
- 2 tsp ginger-garlic paste
- 2 large onions, chopped
- 5 green chilies, chopped
- 4 bay leaves
- 3-4 cloves
- 1” cinnamon stick
- 3-4 cardamoms
- 3-4 tbsp ghee or butter
- 1 tsp chili powder
- 1 tsp turmeric powder (haldi)
- Salt to taste
- 2-3 tbsp fried onions, for garnishing
- 1-2 boiled eggs, for garnishing
- Few sprigs chopped coriander leaves, for garnishing
How to Make Yakhni Pulao Step by Step:
In a bowl, add mutton pieces along with 1 tsp ginger-garlic paste, garam masala, yogurt, mint leaves, salt, chili powder, turmeric powder and mix well. Marinate the mutton for at least 2-3 hrs or overnight in the refrigerator.
Heat ghee in a pan, add cloves, cinnamon stick, cardamoms, bay leaves and fry for a minute. Now add the chopped onions and fry until they are golden brown in color. Also add remaining ginger-garlic paste, green chilies and fry for few minutes.
Then add marinated mutton pieces and saute for few minutes. Add 1-2 cups of water and allow to cook for 15-20 minutes or until the mutton pieces are slightly tender.
Now add soaked rice with enough water to cook the rice. Add salt if needed, mix well and cook until the rice is done.
Remove from heat, garnish the rice with coriander leaves, fried onions, boiled eggs and serve with raita.
